White tea, like Pu'er tea, is valued for its aging potential. This Yunnan Old White Tea Cake (Gongmei) is made from sun-dried tea leaves, naturally aged for 3–5 years, then pressed into a 357g cake. According to the different shapes, white tea can also be divided into loose leaf and compressed forms. Aged white tea is often called "old white tea" and is cherished for its transforming aroma and taste over time.

The white tea leaves are plump and tender, harvested from special large-leaf tea tree varieties grown in Yunnan province. In recent years, Yunnan white tea has gained popularity alongside traditional Pu'er, admired for its smooth, sweet character and its ability to age gracefully.

White tea is well known for being gentle and easy to enjoy. It requires no special brewing skills and can be steeped many times without bitterness. The tea liquor is rich, fragrant, and sweet, with a natural honey-like aroma and a moist, smooth mouthfeel.

The compressed white tea cake is made from sun-dried tea leaves, processed through withering, drying, and then steamed and pressed into shape. Common pressed forms include cake tea, brick tea, and tuo cha. This Gongmei cake is pressed after several years of loose-leaf aging, allowing its flavor to deepen and mellow.

The most distinctive features of Yunnan white tea are its sweetness, fragrance, and smoothness. It has no bitterness or astringency, making it suitable for all ages – from young children to the elderly. Its mild nature and broad appeal make it an excellent choice for any season. White tea should be stored in a cool, dry, well-ventilated place, away from moisture, direct sunlight, and high temperatures.

BREWING
Can be brewed in any way you like. We advice to start with tea-water ratio about 1:100, water temperature – just of the boil, total brewing
time 3-4 min.
We found it to be most suitable for following brewing methods:
Teapot with sifter
French press
Pour over
Clever Dripper.

TROUBLESHOOTING
Ripe pu-erh wet-pile fermentation process takes up to 60 days and involves microorganisms, so ripe pu-erh taste profile differs from taste
of other types of teas. A bit earthy taste is a part of pu-erh taste profile.
Please remember that short-time (10-20 sec) warming up (or rinsing) stage is needed while brewing pressed tea. We would also
recommend to crush mini cake evenly for better rinsing and faster brewing process.
Ripe pu-erh tea should be brewed with water just boiled (208-212°F).
